Ingredients

1 cup Pasta

as needed Water

Pasta water 1/4 cup

General water 1/4 cup

2 tsp Oil

1 tsp Butter

1 tbsp Garlic (chopped)

1 cup Sweet Corn Kernels

3 Cheese Slice

1 cup Mayonnaise

1 tsp Oregano

1 tsp Red Chilli Flakes

to taste Salt

1 Onion

1 Green Capsicum

Instructions

Step 1Boil the Pasta

Bring a pot of water to a boil and add salt to taste.

Add one cup of pasta (fusilli is recommended) and cook until it is done. Do not overcook the pasta.

Drain the pasta, but reserve some of the cooking water to use later for the sauce.

Step 2Prepare the Sauce Base

In a pan, heat two teaspoons of oil and one teaspoon of butter.

Add one tablespoon of finely chopped garlic and sauté for about 10 to 15 seconds.

Add one medium-sized finely chopped onion and cook until it turns slightly pink.

Add 1/4 cup of boiled sweetcorn and one medium-sized chopped capsicum. Sauté for a few seconds; do not overcook the vegetables

Step 3Create the Creamy Sauce

Add a little bit of salt and 1/4 cup of plain mayonnaise to the pan.

Pour in 1/4 cup of the reserved pasta water (or regular water if needed) to help create a smooth consistency.

Stir in three cheese slices (or one cheese cube) until melted and incorporated into a smooth sauce.

Taste the sauce and adjust the salt as necessary.

Step 4Combine and Serve

Add the boiled pasta to the pan with the sauce.

Sprinkle with 1/2 teaspoon of oregano (or mixed Italian herbs) and 1/2 teaspoon of chilli flakes.

Cook for two more minutes on medium-to-high flame, stirring to coat the pasta evenly.
