Ingredients

60 g Clarified Butter (Ghee)

90 g Powdered Sugar

150 g Whole Wheat Flour

15 g All-Purpose Flour (Maida)

3 tsp Baking Powder

60 g Milk

Instructions

1

In a large mixing bowl, combine the room-temperature ghee and powdered sugar.

2

Whisk the mixture well until it becomes light, fluffy, and creamy in color.

3

Add the baking powder, whole wheat flour (atta), and the optional all-purpose flour (maida) to the creamy mixture.

4

Mix everything thoroughly until well incorporated.

5

Gradually add milk in small amounts while mixing. Continue until a soft, smooth dough is formed.

6

If the dough feels too dry, add a little extra milk as needed, but be careful not to make it too sticky.

7

Either divide the dough into small, equal-sized portions by hand to shape them into rounds, or use a biscuit maker with your preferred design plate to press out the biscuits.

8

Spread a layer of salt at the bottom of your pressure cooker and place a steel ring or small bowl inside as a stand.

9

Cover the cooker (without the gasket/whistle) and preheat it on medium-low flame for about 10 minutes.

10

Place the shaped biscuits on an idli tray or a baking sheet that fits inside your cooker.

11

Carefully place the tray inside the preheated cooker. Cover and cook on low flame for 15 minutes.

12

Once finished, carefully remove the biscuits. Let them cool down completely on a wire rack or plate; they will firm up as they cool. Serve these crispy treats with your favorite tea.
