Wet Ingredients:

200 g Clarified Butter (Ghee)

200 g Castor Sugar

Dry Ingredients:

60 g All-Purpose Flour (Maida)

60 g Whole Wheat Flour

40 g Semolina(Rava)

30 g Chickpea Flour (Besan)

1 tsp Baking Powder

1 tsp Baking Soda

1 tsp Cardamom Powder

pinch Salt

Topping:

Pistachios, chopped into halves, as required

In a mixing bowl, combine the ghee and caster sugar.

Beat the mixture thoroughly until it becomes light, fluffy, and turns pale in color.

In a separate bowl, sift and mix together the maida, whole wheat flour, semolina, chickpea flour, baking powder, baking soda, cardamom powder, and a pinch of salt.

Gradually add the dry ingredient mixture to the ghee and sugar base.

Mix everything together until it forms a consistent dough.

Place the prepared dough in the refrigerator for about 15 to 20 minutes.

Chilling makes the dough firm and easier to handle.

Preheat your oven to 180°C. Take about 1 tablespoon of the chilled dough at a time and roll it into a smooth ball.
