Ingredients

Pasta :

2 cup Pasta

Vegetable and beans:

1 Red Onion (thinly sliced)

1 cup Cucumber (thinly sliced)

1 cup Red Bell Pepper (small sized)

1 cup Fresh Parsley (chopped)

1 cup Black Olive

1 cup Chickpeas

Dressing :

3 tbsp Extra Virgin Olive Oil

1 tbsp White Vinegar

1 Garlic

1 tsp Dried Oregano

as needed Sea Salt

Bring a large stock pot of water to a boil over high heat and season it generously with sea salt.

Add 2 1/4 cups (8 oz) of your chosen pasta (such as gratini, fusilli, or bow tie) to the boiling water.

Cook until the pasta reaches an al dente texture, stirring occasionally to prevent sticking. Check your specific package instructions for the precise timing.

Drain the cooked pasta into a colander and allow it to cool for 5 to 10 minutes.

Thinly slice one small red onion.

Cut half of an English cucumber into small, bite-sized pieces.

Chop one red bell pepper into small, bite-sized pieces.
