Ingredients

1 medium Beetroot

1 bowl Yoghurt

Green Chilies: 1–2, chopped (adjust for heat)

to taste Salt

Cumin Powder:1/2 tbsp

Tadka (Tempering) Ingredients:

1 tbsp Oil

Mustard Seeds: tbsp

Urad Dal : 1/2 tbsp

Curry Leaves: 1 sprig

Heat oil in a pan over medium heat.

Add mustard seeds and wait for them to crackle.

Add the broken urad dal and roast on low to medium heat until it turns golden brown and crispy, ensuring it does not burn.

Once the dal is golden, add the torn or chopped curry leaves, give it a quick stir, and turn off the heat. Set this mixture aside.

In a mixing bowl, combine the grated beetroot with the fresh yogurt.

Add the chopped green chilies, salt, and roasted cumin powder to the bowl.

Mix everything well until fully incorporated.

Add the prepared tadka mixture into the beetroot and yogurt blend and mix thoroughly.

You can serve this immediately, but for the best flavor and texture, refrigerate it for a while to allow the beetroot to soften and the raita to chill.
