Ingredients

Chana (1 cup)

2 cup Water

1 cup Water

1 medium Potatoes (boiled and chopped)

1 cup Cucumber (chopped)

1 medium Onion (finely chopped)

1 Tomato

1 Green Chilli (chopped)

1 tsp Dry Mango Powder

1 tsp Chaat Masala

1 tsp Garam masala Powder (Hot Spices)

1 tsp Salt

1 tsp Cumin Powder

1 tsp Black Salt

1 as needed Lemon Juice

as needed Coriander Leaves (chopped)

Instructions

Rinse the mixed chana/vatana thoroughly 5-7 times with water until the water runs clear.

Add two glasses of water to the legumes and let them soak overnight to ensure they are soft and swollen.

In the morning, drain the water. Place the soaked legumes on a clean cloth. You can fold the cloth or create a pouch to cover them. Keep the cloth damp by occasionally sprinkling a little water over it to maintain moisture. Let it rest for 12-15 hours until sprouts appear.

Once sprouted, transfer the legumes into a pressure cooker with one glass of water. Cook for two whistles, then turn off the heat.

After the steam releases, drain any excess water and allow the sprouted legumes to cool down completely.

Transfer the cooled sprouts to a mixing bowl. Add the finely chopped boiled potatoes, cucumber, tomato, onion, and green chili.

Add the amchur powder, chaat masala, garam masala, salt, cumin powder, and black salt to the bowl.

Squeeze the fresh lemon juice over the mixture and garnish with freshly chopped coriander. If you like, you can also add cubes of paneer.

Toss everything together thoroughly until well combined and serve fresh.
