Ingredients

Vegetables:

2 cups Cabbage (shredded)

2 no. Tomato (thinly sliced)

1 no. Green Bell Pepper (thinly sliced)

2 no. Carrot (thinly sliced)

to taste Red Onion (thinly sliced)

3 small Cucumber (thinly sliced)

3 tbsp Coriander Leaves (chopped)

Dressing:

1 tbsp Light Soy Sauce

1 tbsp Red Chilli Sauce

1 tbsp Olive oil

2 tbsp Honey

2 tbsp Roasted Peanuts

to taste Red Chilli Flakes

1 tsp Garlic Paste

1 tsp Ginger Paste

1 piece Lemon Juice

to taste Salt

Instructions

Step 1Prepare the Peanuts

Place the roasted peanuts into a sealable plastic bag. Use a rolling pin or another heavy object to crush them into smaller, coarse pieces.

Avoid crushing them into a fine powder.

Step 2Prepare the Vegetables

Finely shred the cabbage.

Thinly slice the carrots, cucumbers, tomatoes, and bell pepper. (Optional: remove seeds and pulp from the tomatoes if preferred).

Thinly slice the red onion and prepare the coriander leaves.

Combine all the prepared vegetables in a large mixing bowl.

Step 3Create the Dressing

In a separate bowl, whisk together the following ingredients : Low sodium soy sauce, Red chilli sauce, Extra virgin olive oil, Honey, Fresh lime juice, Crushed garlic, Crushed ginger

Step 4Combine and Serve

If you prefer a spicier salad, add red chilli flakes to the dressing to taste.

Add approximately half of the crushed peanuts into the salad bowl.

Pour the dressing over the vegetables right before serving to ensure the salad stays crisp and does not turn watery.

Toss everything together well so the dressing coats the vegetables thoroughly.

Taste the salad and add salt if needed.

Garnish the top with the remaining crushed peanuts and serve immediately.
