Ingredients

Rotini pasta : 12 oz

1 tsp Olive oil

1 cup Cherry Tomato

1 piece Red Bell Pepper (thinly sliced)

1 piece Green Bell Pepper (thinly sliced)

1 cup Red Onion (thinly sliced)

1 cup Grated Cheese

1 cup Cucumber (chopped)

2 tbsp Parsley

Italian dressing : 1 cup

1 cup Pepperoncini Pepper

Instructions

1

Bring a pot of well-salted water to a boil.

2

Add the rotini pasta and cook according to the package instructions until al dente.

3

Immediately drain the cooked pasta and rinse it thoroughly under cold water to stop the cooking process and prevent it from becoming mushy.

4

Transfer the drained, cooled pasta into a large mixing bowl.

5

Drizzle with a teaspoon of olive oil and stir well to ensure the noodles do not stick together.

6

Add the cherry tomatoes, diced red bell pepper, diced green bell pepper, diced red onion, Feta cheese, chopped pepperoncini, quartered cucumber, and chopped fresh parsley to the bowl.

7

Toss everything together until well combined.

8

Shake your Italian dressing well and pour it evenly over the pasta and vegetable mixture.

9

Stir thoroughly until every ingredient is nicely coated.

10

Cover the bowl and refrigerate for at least 30-60 minutes before serving.

11

This resting time allows the flavors to deepen and develop. Remember to give the salad one final stir before serving.
