1 tsp Black Pepper Powder

Vegetables :

1 small cup Grated Carrot

1 cup Red Bell Pepper (thinly sliced)

1 cup Green Bell Pepper (thinly sliced)

A Whole bunch Celery Stalk (thinly sliced)

4 cups Macaroni Pasta

1 cup Green Onion (sliced)

Whisk together full-fat mayonnaise, Dijon mustard, white distilled vinegar, cayenne pepper, freshly ground black pepper, salt, and a small amount of sugar (1-2 tablespoons) in a mixing bowl.

Finely dice celery, red bell pepper, and green peppers (poblano and jalapeno). Add grated carrot and chopped scallions (white and light green parts). Mix the vegetables into the dressing base. Place this mixture in the refrigerator so the vegetables can "quick-pickle" and firm up in the acidic dressing.

Bring a pot of generously salted water to a boil. Add one pound of elbow macaroni and cook until fully tender—do not undercook it.
