Instructions

Step 1Prepare the Dough

1

In a bowl, combine besan (gram flour), salt, turmeric powder, a pinch of baking powder (optional), and crushed ajwain.

2

Add oil and mix until crumbly.

3

Gradually add water to the mixture while kneading until it is well-combined and holds its shape.

4

Rub a little oil over the dough, cover, and let it rest for a few minutes.

Step 2Shape the Fafda

1

Divide the dough into equal-sized portions and shape them into small, thin "bullets."

2

Apply a drop of oil to your palms to prevent sticking, place a dough bullet on a flat surface, and use a rolling pin to roll it out thin and long.

3

Gently lift the rolled dough using a knife.

Step 3Fry and Serve

1

Heat enough oil in a pan for deep frying.

2

Once hot, place the fafdas into the oil and fry on a medium-low flame on both sides until crispy.

3

Remove the fafdas from the pan and optionally fry a few whole green chilies in the same oil to serve as a garnish.
