Ingredients

For the rotis :

1 cup All-Purpose Flour (Maida)

1 cup Whole Wheat Flour

1 tsp Oil

to taste Salt

2 tsp Butter

For the stuffing :

1 tbsp Oil

Ginger - garlic paste : 1 tsp

2 cup Potato (boiled, peeled, and grated)

3 tsp Red Chilli Powder

1 tsp Garam masala Powder (Hot Spices)

1 tsp Chaat Masala

1 tbsp Coriander Leaves (finely chopped)

to taste Salt

Masala water :

1 tsp Dry Mango Powder

1 tsp Red Chilli Powder

1 tsp Garam masala Powder (Hot Spices)

to taste Salt

1 cup Water

Other :

4 tsp Butter

1 cup Onion (finely chopped)

Frenki masala or chaat masala : 2 tsp

Tomato ketchup ( for serving)

Instructions

Combine flours, oil, and salt. Knead into a soft dough, cover with a wet cloth, and rest for 10 minutes. Knead again with remaining oil.

Divide dough into 4 portions. Roll into thin 8-inch circles. Cook on a tava until lightly browned on both sides.

Heat oil in a pan, sauté ginger-garlic paste. Add potatoes, spices, coriander, and salt. Sauté for 2 minutes and set aside.

Heat roti on a tava with butter. In the same pan, heat a portion of stuffing with butter for 1 minute.

Place stuffing on the roti, top with onions, sprinkle with masala water and chaat masala. Roll tightly and serve with ketchup.
