Ingredients

Sprouted Moth Bean Chaat:

Moth beans: 1/2 cup (100 grams)

Water: For soaking (double the amount of beans) and 1 cup for boiling

Salt: 1/2 tsp (for boiling) plus black salt to taste

1 tsp Turmeric Powder

Black salt: 3/4 tsp

3 tsp Chaat Masala

1 finely chopped Green Chilli

1 tsp Roasted Cumin Seeds

1 Tomato

Boiled potato: 1, medium-sized and chopped

Green coriander chutney: 2 tsp

Lemon juice: 1/2 medium-sized lemon

Fresh coriander leaves: 1 tbsp, chopped

Instructions

1

Rinse 1/2 cup of moth beans thoroughly. Place them in a bowl with double the amount of drinking water. Cover and let them soak for 10–12 hours.

2

After soaking, discard the water and rinse the beans again. Wrap the beans in a clean, damp towel and place them in a sieve resting over a bowl. This setup allows for airflow. Leave the beans to sprout for about 20 hours.

3

Bring 1 cup of water to a boil in a cooking pot. Add 1/2 tsp of salt and 1/4 tsp of turmeric powder.

4

Once boiling, add the sprouted moth beans. Cover the vessel and cook on medium flame for 5 minutes.

5

After 5 minutes, test if the grains are soft but still hold their shape. Once done, turn off the flame and strain the beans using a sieve.

6

In a mixing bowl, combine the cooked moth beans with 3/4 tsp black salt, 3/4 tsp chaat masala, 1 finely chopped green chili, 1/2 tsp roasted cumin seeds, 1 chopped tomato, and 1 medium-sized boiled potato (chopped).

7

Stir in 2 tsp of green coriander chutney and the juice of 1/2 a lemon. Mix everything thoroughly.

8

Top with fresh chopped coriander leaves and serve immediately.
