Ingredients

2 cups Moong Sprouts (Bean)

1 medium Carrot (chopped)

1 medium Onion (chopped)

1 pinch Ginger (chopped)

to taste Green Chilli

1 medium Radishes (chopped)

1 medium Tomato (chopped)

1 tsp Black Salt

1 tsp Chaat Masala

1 piece Lemon Juice

2 tbsp Roasted Peanuts

few Coriander Leaves (finely chopped)

Instructions

Place the moong sprouts into a steamer. Cover with a lid and steam for 3 to 4 minutes to ensure they are easy to digest and free from potential surface bacteria. Once finished, remove them from the heat and allow them to cool down completely.

While the sprouts are cooling, finely chop the carrot, onion, radish (or cucumber), and the deseeded tomato. Finely mince the ginger and the green chili.

In a large mixing bowl, add the chopped carrot, onion, ginger, green chili, radish/cucumber, and tomato.

Add the black salt (kala namak), chaat masala, and the juice of half a lemon to the bowl.

Add the lightly crushed roasted peanuts to the mixture for a satisfying crunch and healthy fats.

Add the cooled, steamed sprouts and a generous portion of finely chopped coriander leaves to the bowl. Toss everything together until well combined.

Garnish the salad with a final sprinkle of crushed peanuts and fresh coriander leaves before serving.
