Ingredients

Fermented Dosa Batter:

1 cups Dosa Rice

1 cup Parboiled Rice

1 cup Black Gram (Urad Dal)

2 tbsp Flattened rice (Poha)

1 tsp Fenugreek Seeds

1 tbsp Salt

1 tbsp Sugar

1 cup Water

Instant Dosa Batter:

1 cup Semolina(Rava)

1 cup Rice Flour

1 tsp Powdered Sugar

1 tsp Salt

1 cup Curd

2 tbsp Water

1 pinch Baking Soda

Step 1Fermented Dosa Batter Preparation

In a large bowl, mix moti rice, par-boiled rice, whole urad dal, flattened rice (poha), and fenugreek seeds (methi dana).

Thoroughly wash the mixture with water until the water runs clear. Add fresh water and let the mixture soak for four to five hours.

Discard the soaking water. Using a mixer-grinder, process the soaked ingredients into a fine, smooth paste. Use cold water to prevent the mixture from heating up during grinding; use the pulse mode for better control. The final texture should resemble fine semolina.

Transfer the batter to a large container. Stir in salt and sugar. The sugar is crucial for achieving that characteristic brown color during cooking. Cover and let it ferment in a warm place for 8 to 10 hours (longer in colder climates). Once fermented, the batter will double in size and appear airy.

Mix the fermented batter well. Add a small amount of water to reach a smooth, flowing consistency suitable for spreading.

Step 2Instant Dosa Batter Preparation

In a mixer-grinder, add fine rava (semolina), rice flour, powdered sugar, salt, curd, and water. Blend until you achieve a fine, uniform batter.

Transfer to a bowl and stir in a pinch of baking soda. The batter is ready to use immediately.

Step 3Seasoning the Iron Tawa (if needed)

Wash the pan gently without using abrasive materials. Dry it completely on the stove.

Apply a very thin layer of vegetable oil over the surface using a lint-free cloth. Heat the pan on medium heat until it begins to smoke.

Turn off the heat and let the pan cool down to room temperature. Repeat this heating and cooling process two to three times for a stronger non-stick layer.

Heat the pan again, add a little oil, and sear sliced onions on the surface until charred. This process further enhances the non-stick properties. Discard the onions and wipe the pan clean with a cloth before use.

Step 4Cooking the Dosa

Ensure your iron tawa is hot. Test it by sprinkling water; it should sizzle immediately. Wipe the pan clean with a cloth or an onion halved and dipped in oil.

Pour a ladle of batter into the center of the pan. Spread it in circular motions, keeping the center slightly thicker if you want a soft, spongy texture, or spreading it thin and flat for a crisp dosa.

Drizzle melted ghee or oil around the edges and over the surface. Cook on medium-low heat until the bottom is golden brown and crisp.

Carefully lift the dosa from the pan, fold it, and serve hot with chutney and sambar.
