Ingredients

Base:

1 cup Wheat Flour

3 tbsp Gram Flour (besan)

250 g Bottle Gourd (grated)

Flavorings:

1 tbsp Coriander Powder

1 tsp Cumin Powder

1 tsp Red Chilli Powder

1 tsp Turmeric Powder

1 tsp Green chilli paste

2 tsp Sugar

to taste Salt

Leavening:

pinch Baking Soda

Extras:

1 small Lemon Juice

1 tbsp Oil

1 cup Coriander Leaves (finely chopped)

Tempering:

2 tbsp Oil

1 tbsp Mustard Seeds

2 tbsp Sesame Seeds

4 leaves Curry Leaves

1 piece Dry Red Chilli

Instructions

Boil water in a pot and place a greased sieve or steaming plate over it. Cover with a lid and let it heat.

In a large mixing bowl, combine , Wheat flour and Gram flour (besan)

Now combine Coriander powder Cumin powder Red chili powder ,Turmeric powder and Ginger-chili paste

Mix well

Add Sugar, Baking Soda, Lemon juice, Oil, Fresh coriander leaves , Grated bottle gourd (lauki)

Mix everything well and add salt to taste.

The grated bottle gourd will release moisture, so avoid adding extra water. Knead into a soft dough.

Grease your palms with oil and shape the dough into cylindrical rolls. Place them in the prepared steamer and steam for 20–25 minutes.

The muthia is cooked when the rolls feel firm to touch.

Allow the steamed rolls to cool completely. Slice them into thin pieces.

Heat oil in a pan. Add Mustard seeds, Sesame seeds, Curry leaves and Dry red chili

Once aromatic, add the sliced muthia and toss gently. Cook for 3–4 minutes until the edges turn light golden brown.

Garnish with fresh coriander leaves and serve warm.
