Ingredients

1 cup Gram Flour (besan)

1 tsp Turmeric Powder

1 tsp Asafoetida Powder (Hing)

2 tsp Lemon Juice

1 tsp Powdered Sugar

2 tsp Oil

Water: Approx. 2 tbsp (add gradually for a semi-soft dough)

to taste Salt

In a mixing bowl, combine the besan (Bengal gram flour), turmeric powder, asafoetida (hing), lemon juice, powdered sugar, oil, and salt. Gradually add water and knead into a semi-soft dough.

Shape the prepared dough into a cylindrical roll so it fits easily into your sev press.

Select the plate with the thinnest holes for the sev press. Place the dough into the press, close the lid tightly, and press out thin strands onto a greased baking tray.

Bake in a pre-heated oven at 200°C (400°F) until the strands turn light brown and crispy.

Allow the baked sev to cool down completely. Once cooled, you can crush them between your palms as desired. Store in an air-tight container and use as a crunchy topping for snacks like bhel or sev puri.
