Ingredients

For the Paneer Tikka Marination :

2 tbsp Mustard Oil

1 tsp Kashmiri Red Chilli Powder

3 tsp Coriander Powder

1 tsp Garam masala Powder (Hot Spices)

1 tsp Roasted Cumin Powder

1 tsp Black Salt

1 tsp Chaat Masala

1 tsp Salt

1 tbsp Ginger-Garlic Paste

1 tbsp Lemon Juice

1 tbsp Gram Flour (besan)

1 cups Curd

150 g Paneer Cubes

3 tbsp Green Capsicum (thinly sliced)

4 tbsp Onion

2 tbsp Tomato

1 tbsp Oil

1 tbsp Dry Fenugreek Leaves (Methi)

For the Mint Mayonnaise :

Green Chutney

Other Ingredients :

Instructions

Step 1Prepare the Paneer Tikka Marination

In a bowl, combine mustard oil and Kashmiri red chilli powder. Mix well.

Add coriander powder, garam masala, roasted cumin powder, black salt, chaat masala, and regular salt.

Stir in ginger-garlic paste, lemon juice, roasted gram flour (besan), and kasuri methi.

Finally, fold in the thick curd and mix everything until smooth.

Step 2Marinate and Cook the Paneer

Add the cubed paneer, finely chopped capsicum,onion, and deseeded tomato into the marinade. Coat everything evenly and let it rest for 15–20 minutes.

Heat a tablespoon of oil in a pan and cook the marinated vegetable and paneer mixture over medium flame for about 5–6 minutes until the paneer is cooked and the oil separates. Set aside to cool.

Step 3Prepare the Mint Mayonnaise and Bread Discs

Mix mayonnaise with green chutney (coriander-mint chutney) to create a flavored spread.

Take your bread slices and use a bowl or round cutter to cut out circular discs. To create a "ring" effect, take one of the circular bread discs and cut a smaller circle out of its center using a smaller cutter.

Place the ring on top of a solid bread circle to form a cup-like shape.

Step 4Assemble and Bake

Apply a generous layer of the mint mayonnaise mixture onto the bread base.

Place the bread ring on top and fill the center with the prepared paneer tikka mixture.

Top with a generous amount of mozzarella and processed cheese.

Brush the edges of the bread with butter or oil for extra crispiness.

Step 5Final Cooking

Preheat a heavy-bottomed kadai with salt at the base and a stand for 10 minutes. Place the discs on a greased plate and cook covered on low-medium flame until the cheese melts and the bread is crispy.

Preheat the oven to 180°C. Bake the discs on a greased tray for 8–10 minutes or until the bread is golden brown and the cheese is perfectly melted.
