Ingredients

For the dough :

1 cup Whole Wheat Flour

1 tsp Carom Seeds (Ajwain)

1 tbsp Clarified Butter (Ghee)

1 tsp Salt

1 cup Water

2 tbsp Fine Semolina

For the masala & filing :

1 tbsp Fennel Seeds

1 tsp Cumin Seeds

1 tsp Dry Fenugreek Leaves (Methi)

1 tsp Coriander Seeds

1 cups Green Gram Dal (Moong Dal)

1 tbsp Oil

1 tsp Salt

1 tsp Turmeric Powder

1 tsp Red Chilli Powder

1 tsp Chaat Masala

2 tbsp Water

Instructions

Step 1Preparing the Dough

In a mixing bowl, combine 1 cup of whole wheat flour, 2 tablespoons of fine semolina (rava), 1 teaspoon of carom seeds, 1 tablespoon of ghee, and 1 teaspoon of salt.

Gradually add about 1/4 cup of water to the dry mix.

Knead into a firm dough (avoid making it as soft as chapati dough).

Cover the dough and let it rest for 30 minutes.

Step 2Preparing the Filling

In a blender, process 1 tablespoon of fennel seeds, 1 teaspoon of cumin seeds, 1 teaspoon of kasoori methi, and 1 tablespoon of coriander seeds into a coarse powder.

Heat a pan with 1 tablespoon of oil. Add the powdered masala and sauté briefly.

Stir in the ground moong dal paste and cook, stirring intermittently.

Add 1 teaspoon of salt, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, and 1 teaspoon of chaat masala. Mash any lumps.

Add 2 tablespoons of water to finish, then form the mixture into small round balls.

Step 3Assembly and Baking

Divide the rested dough into equal parts and form them into balls.

Flatten each ball with your fingers to shape them into small cups (avoid using a rolling pin, as this prevents puffing).

Place a filling ball into each dough cup and seal it closed.

Gently press and flatten the stuffed dough balls by hand.

Bake in a preheated oven at 350°F. Bake for 15 minutes, then flip them over and continue baking for another 15 to 25 minutes.

If you desire a deeper golden-brown color, turn on the broiler mode for about 1 minute at the end of the process.
