1 cup Whole Wheat Flour

1 tsp Carom Seeds (Ajwain)

1 tbsp Clarified Butter (Ghee)

2 tbsp Semolina(Rava)

1 tsp Salt

Water: 1/4 cup (or as needed for a firm dough)

For the Masala/Filling:

1 tbsp Fennel Seeds

1 tsp Cumin Seeds

1 tsp Dry Fenugreek Leaves (Methi)

1 tsp Coriander Seeds

1 cup Green Gram Dal (Moong Dal)

1 tbsp Oil

1 tsp Salt

1 tsp Turmeric Powder

1 tsp Red Chilli Powder

1 tsp Chaat Masala

2 tbsp Water

Step 1Prepare the Dough

Combine whole wheat flour, fine semolina, carom seeds, ghee, and salt in a bowl.

Gradually add water and knead into a firm, non-soft dough.

Cover and let the dough rest.

Step 2Prepare the Filling

Blend fennel seeds, cumin seeds, kasoori methi, and coriander seeds into a coarse powder.

Grind the pre-soaked moong dal into a coarse paste.

Heat oil in a pan, roast the ground masala powder, then add the moong dal paste and sauté.

Season with salt, turmeric powder, red chilli powder, and chaat masala, mashing any lumps as you mix.

Stir in a little water for the final touch, then shape the mixture into small round balls.

Step 3Shaping and Baking

Divide the rested dough into equal parts.

Flatten a dough ball using your fingers—avoid using a rolling pin to ensure the kachoris puff up properly.
