Ingredients

For the puff pastry dough :

1 cup All-Purpose Flour (Maida)

1 tsp Salt

1 tsp Lemon Juice

100 g Butter

For the potato stuffing :

1 tbsp Oil

1 cup Green Peas

1 tsp Turmeric Powder

1 tsp Cumin Powder

1 tsp Ginger

2 Potato (boiled, and peeled)

1 tsp Salt

1 tsp Coriander Powder

1 tsp Red Chilli Powder

1 tsp Dry Mango Powder

1 tbsp Fresh Coriander

1 tsp Garam masala Powder (Hot Spices)

Instructions

Step 1Preparing the Puff Pastry Sheets

Combine 1 cup of refined flour, 1/2 tsp salt, 1 tsp lemon juice, and 50g of softened butter in a bowl. Mix well, then gradually add water to knead into a soft, smooth dough. Cover and let it rest for 20 minutes.

Roll out the dough into a rectangular sheet. Take the remaining 50g of butter and spread it over one-third of the sheet. Fold the dough in thirds (like a letter) and press the edges to seal.

Rotate the dough and roll it out carefully again. Fold it into thirds again. Repeat this folding and rolling process four times in total to create multiple layers of butter and dough.

Between each round of folding, wrap the dough in plastic and refrigerate it for 30 minutes. This keeps the butter firm and ensures flaky layers.

Step 2Preparing the Stuffing

Heat 1 tbsp oil in a pan, add 1/2 cup green peas, and a splash of water. Cover and cook until the peas are tender

Add 1/4 tsp turmeric, 1/2 tsp cumin powder, 1 tsp grated ginger, 1/2 tsp salt, 1 tsp coriander powder, 1/2 tsp red chili powder, 1/2 tsp dry mango powder (amchur), and 1/4 tsp garam masala. Mix well.

Incorporate 2 boiled, mashed potatoes. Add fresh coriander leaves and cook the mixture for a few minutes while mashing the potatoes thoroughly with the spices. Set aside to cool

Step 3Shaping and Baking

Roll out your prepared chilled dough sheet into a thin rectangle. Trim the edges to make it neat, then divide the sheet into equal squares.

Place a spoonful of the potato stuffing in the center of each square. Apply a little water to the edges, fold them over to form a triangle, and press to seal.

Brush the tops of the patties with full-cream milk for a nice sheen. Preheat the oven to 180°C. Bake for about 15-20 minutes, then adjust the temperature or time as needed until they are golden brown and crispy on both sides. Serve hot.
