Ingredients

1 cup Semolina(Rava)

2 tbsp Oil

1 tsp Mustard Seeds

4 piece Green Chilli

1 tbsp Ginger (chopped)

A pinch Asafoetida Powder (Hing)

2 small Onion (roughly chopped)

to taste Salt

A pinch Turmeric Powder

A pinch Red Chilli Powder

1 piece Carrot (chopped)

7 piece French Beans (chopped)

1 cup Green Peas

Water: 2 cups (for a 1:2 ratio with semolina)

1 tsp Clarified Butter (Ghee)

handful Fresh Coriander

Instructions

Roast Semolina: Dry roast one cup of semolina in a pan until it turns a lovely golden color, then allow it to cool.

Sauté Spices: Heat oil in a deep bottom pan, add mustard seeds, and let them crackle. Add slit green chillies, finely chopped ginger, a pinch of asafoetida powder, and chopped onions with salt. Sauté until the onions are translucent.

Add Veggies: Add turmeric powder, red chilli powder, finely chopped carrots, French beans, and fresh green peas. Mix well.

Cook Vegetables: Add a little water, cover the pan, and allow the vegetables to cook for 3 minutes.

Combine and Steam: Add the dry-roasted semolina to the veggies and mix thoroughly. Add two cups of water (maintaining a 1:2 ratio) and mix well again.

Finish and Serve: Add a teaspoon of ghee for flavor and garnish with fresh coriander leaves. Your upma is ready to serve.
