Muthia is a classic, healthy, and flavorful Gujarati snack that is perfect for any time of day. Made with fresh bottle gourd (lauki), whole wheat flour, gram flour, and a blend of aromatic spices, these steamed dumplings are incredibly nutritious. After steaming until firm, they are thinly sliced and tossed in a simple, zesty tempering of mustard seeds, sesame seeds, and curry leaves for a delicious crunch. 1 cups Wheat Flour
3 tbsp Gram Flour (besan)
250 g Bottle Gourd (grated)
1 tsp Coriander Powder
1 tsp Cumin Powder
1 tsp Red Chilli Powder
1 tsp Turmeric Powder
2 tsp Sugar
1 tsp Ginger-Green Chilli Paste
2 pinch Baking Soda
1 piece Lemon Juice
1 tbsp Oil
1 cup Coriander Leaves (chopped)
small Salt
to taste Salt
For the Tempering:
2 tbsp Oil
1 tbsp Mustard Seeds
2 tbsp Sesame Seeds
few Curry Leaves
1 piece Dry Red Chilli
Step 1— Preparing the Dough

In a large bowl, combine the wheat flour, gram flour, coriander & cumin seed powder, red chilli powder, turmeric powder, sugar, ginger & chilli paste, soda bicarb, lemon juice, oil, coriander leaves, and grated bottle gourd (lauki).

Add salt to taste. Mix all the ingredients well. As you mix, the salt will cause the bottle gourd to release moisture, which helps bind the dough together. Do not add any extra water.
Step 2— Steaming

Prepare your steamer by boiling a pot of water and placing a greased perforated sieve or steamer tray on top. Cover it with a lid.

Apply a little oil to your palms to prevent sticking, then take portions of the dough and shape them into cylindrical rolls.

Place the rolls on the steamer tray, cover with the lid, and steam for 20–25 minutes.

Once firm to the touch, remove the rolls from the steamer and let them cool down completely.
Step 3— Tempering

Once cooled, chop the steamed rolls into thin, uniform slices.

Heat oil in a pan. Once hot, add the mustard seeds, sesame seeds, curry leaves, and dry red chilli.

Add the sliced muthias to the pan and toss them gently.

Sauté for 3–4 minutes until they have nice, light brown edges.

Garnish with fresh coriander leaves and serve warm.
