Ingredients

1 cup Gram Flour (besan)

1 cup Sour Curd

1 cup Water

1 cup Sweet Corn Kernels

to taste Green Chilli (finely chopped)

as needed Ginger

as needed Fresh Coriander

1 pinch Turmeric Powder

to taste Salt

1 tbsp Oil

1 piece Fruit salt (Eno)

small Red Chilli Powder

For the Tempering:

1 tbsp Oil

1 tsp Mustard Seeds (tempering)

1 tsp White Sesame Seeds

1 pinch Asafoetida Powder (Hing)

Instructions

Step 1Prepare the Batter Base

In a mixing bowl, combine fine semolina (suji), gram flour (besan), and sour curd (or buttermilk). Mix well.

Add water gradually to achieve a consistency similar to dosa batter. Let the mixture rest for about 10 minutes.

Step 2Process the Corn

Coarsely crush the sweet corn using a chopper. Do not make a fine paste.

Step 3Combine and Season

Add the crushed sweet corn to the semolina batter.

Stir in finely chopped green chillies, grated ginger, salt, turmeric powder, and one tablespoon of oil. Mix everything thoroughly.

Step 4Steam the Dhokla

Prepare your steamer by heating water until it is boiling.

Grease a dhokla plate with oil.

Just before steaming, add a small packet of fruit salt (Eno) to the batter and mix quickly until it becomes light and airy.

Pour the batter onto the greased plate and sprinkle red chilli powder on top.

Place the plate in the steamer, cover with a lid, and steam on high heat for 20 minutes.

Step 5Tempering and Serving

Heat 1-2 tablespoons of oil in a pan. Add mustard seeds, white sesame seeds, and a pinch of asafoetida (hing).

Once the dhokla is steamed, cut it into squares.

Pour the prepared tempering over the cut dhokla pieces.

Garnish with freshly chopped coriander and serve with green chutney.
