1 piece Green Capsicum (Finely Chopped)
1 piece Red Capsicum (Finely Chopped)
1 piece Yellow Capsicum (Finely Chopped)
as needed Cucumber (chopped)
1 small Grated Carrot
small Cabbage (chopped)
few Spring Onion Greens
as needed Mayonnaise
1 tsp Salt
1 tsp Chili Flakes
to taste Pepper (crushed)
as needed White Bread Slices
as needed Butter
Step 1— Prepare the Vegetables
1
Finely chop the green, red, and yellow capsicum, as well as the cucumber and cabbage.
2
Grate the carrot and chop the spring onion greens (or substitute with coriander leaves)
Step 2— Prepare the Filling
1
In a mixing bowl, combine all the chopped and grated vegetables.
2
Add salt, chili flakes (optional), and freshly crushed pepper to the vegetable mixture.
3
Add mayonnaise to the bowl and mix well until the filling reaches a creamy consistency. Add more mayonnaise if the mixture appears too dry.
Step 3— Assemble the Sandwich
1
Take your preferred bread slices (white, brown, or multi-grain).
2
For a plain sandwich, you may trim off the bread edges if desired.
3
Spread the prepared vegetable and mayo filling evenly across one slice of bread.
4
Top with a second slice of bread and gently press down.
5
Cut the sandwich into your preferred shape, such as triangles or rectangles.
Step 4— Optional Grilling/Toasting
1
If you prefer a grilled version, place a slice of cheese over the filling before closing the sandwich.
2
Grease a grill pan or regular pan with a little butter.
3
Place the sandwich on the pan, toast until golden brown, and flip to toast the other side. You can add a little butter to the top surface as well for extra crispiness.
4
Serve the sandwich hot.
