Ingredients

1 piece Green Capsicum (Finely Chopped)

1 piece Red Capsicum (Finely Chopped)

1 piece Yellow Capsicum (Finely Chopped)

as needed Cucumber (chopped)

1 small Grated Carrot

small Cabbage (chopped)

few Spring Onion Greens

as needed Mayonnaise

1 tsp Salt

1 tsp Chili Flakes

to taste Pepper (crushed)

as needed White Bread Slices

Instructions

Step 1Prepare the Vegetables

Finely chop the green, red, and yellow capsicum, as well as the cucumber and cabbage.

Grate the carrot and chop the spring onion greens (or substitute with coriander leaves)

Step 2Prepare the Filling

In a mixing bowl, combine all the chopped and grated vegetables.

Add salt, chili flakes (optional), and freshly crushed pepper to the vegetable mixture.

Add mayonnaise to the bowl and mix well until the filling reaches a creamy consistency. Add more mayonnaise if the mixture appears too dry.

Step 3Assemble the Sandwich

Take your preferred bread slices (white, brown, or multi-grain).

For a plain sandwich, you may trim off the bread edges if desired.

Spread the prepared vegetable and mayo filling evenly across one slice of bread.
