Ingredients

200 g Semolina(Rava)

100 g Yogurt

3 tsp Salt

3 tsp Powdered Sugar

1 cup Water

1 1⁄2 tsp Eno fruit salt

1 1⁄2 tsp Baking Soda

as needed Oil

3 tbsp Tomato (chopped)

3 tbsp Onion (chopped)

3 tsp Ginger (chopped)

1 piece Green Chilli (chopped)

A handful Coriander Leaves (chopped)

Instructions

Combine the semolina, yoghurt, salt, sugar, and water in a mixer-grinder. Blend until you achieve a smooth, pourable batter consistency.

Stir in the Eno or baking soda gently to aerate and ferment the batter instantly.

Transfer the batter to a bowl and let it rest for 5 minutes.

Pour a ladle of batter into the center of a hot pan. Allow it to spread naturally. Cook until air pockets form on the surface and the top looks set.

Pour the batter onto a hot pan and spread in a circular motion. Add a drizzle of oil and cook until crisp and golden. Roll or fold as desired

Pour the batter onto the pan without spreading. Wait 10-15 seconds, then sprinkle your choice of chopped vegetable toppings. Cook until air pockets form on the surface and the base is golden brown.
