Ingredients

1 cup Water

1 tsp Clarified Butter (Ghee)

1 tsp Salt

Rice powder : 1 cup

Instructions

Bring the water to a boil in a pan.

Add the ghee and salt to the boiling water.

Stir in the rice powder. Ensure the flour cooks thoroughly in the boiling water and combine well.

Cover the pan with a lid and set it aside to cool until it is safe to handle.

Knead the dough for at least 10 minutes until it becomes very smooth. Keep the dough warm to maintain softness.

Divide the dough into small, lemon-sized balls.

Press each ball into a flat disc using your hands.

Roll the discs out into thin circles. You may use a canister cap to trim them into perfect shapes.

Lightly cook the pathiri on both sides on a pan. Since the dough was pre-cooked in hot water, it only requires light cooking.
