Ingredients

For the sesame powder :

2 tbsp Bengal Gram (Chana Dal)

2 tbsp Black Gram (Urad Dal)

1 tbsp Cumin Seeds

8 piece Dry Red Chilli

1 tsp Peppercorns

2 Tamarind

1 tbsp Dry Shredded Coconut

3 tbsp Sesame Seeds

1 tsp Rock Salt

1 tsp Asafoetida Powder (Hing)

For the sesame rice :

Large bowl Cooked Rice

3 tsp Oil

1 tsp Bengal Gram (Chana Dal)

1 tsp Black Gram (Urad Dal)

1 tbsp Peanuts

A few Cashew Nuts

1 tsp Mustard Seeds

2 piece Red Chilli

A few Curry Leaves

Sesame powder : 3 tsp

to taste Salt

1 tsp Clarified Butter (Ghee)

Instructions

In a pan over low heat, dry roast chana dal and urad dal for 2 minutes.

Add cumin seeds, red chillies, peppercorns, and tamarind bits. Roast for another 2 minutes.

Stir in dried coconut bits and roast for 2-3 minutes. Add sesame seeds, rock salt, and hing, then lightly toast.

Turn off the stove, let ingredients cool completely, then grind into a fine powder.

Heat oil in a kadai. Add chana dal, urad dal, peanuts, and cashews; saute until golden.

Add mustard seeds, red chillies, and curry leaves.

Add cooked rice and the ground sesame powder. Mix well.

Taste and add extra salt or powder if needed. Stir in ghee for a final touch of flavor and serve hot.
