Ingredients

For the Vegetable Stew :

2 tbsp Oil

Whole Spices (2 cardamom, 4 cloves, 1 tsp black pepper )

Aromatics (4 chopped small onions, 2 chopped green chilies, 1-inch piece of ginger chopped, 3 garlic cloves chopped, and a few curry leaves)

Vegetables (1 chopped carrot, 1 chopped potato, 1/2 cup green peas, and some chopped beans)

1 tsp Salt

2 cups Coconut Milk

For the Idiyappam :

2 cups Rice Flour

1 tsp Salt

3 cups Water

1 tbsp Oil

Instructions

Step 1Preparing the Vegetable Stew

Heat oil in a pan and add whole spices (cardamom, cloves, and black pepper). Sauté until fragrant.

Add chopped onions, green chilies, ginger, garlic, and curry leaves. Sauté until the onions soften.

Add the chopped vegetables (carrots, potatoes, green peas, and beans) along with salt. Sauté for about two minutes.

Pour in the coconut milk, cover the pan, and cook for 8 minutes or until the vegetables are fully tender.

Step 2Preparing the Idiyappam

In a bowl, combine roasted rice flour with salt.

Separately, boil water with a tablespoon of oil.

Gradually pour the boiling water into the rice flour, mixing continuously to form a smooth dough. Avoid adding all the water at once to prevent lumps.

Once the mixture is cool enough to touch, knead the dough for about 5 minutes until smooth and soft.

Grease a noodle press (chakli maker) with oil, fill it with the dough, and press the dough in circular motions onto greased steaming plates.

Steam the idiyappam for 10 minutes.

Serve the hot, soft idiyappam with the prepared vegetable stew.
