Ingredients

Raw rice : 2 cup

1 cup Fresh Coconut

1 cup Boiled Rice

1 tsp Instant Yeast

1 cup Coconut Water

1 1⁄2 cup Water

2 tbsp Sugar

to taste Salt

In the same jar, add coconut, boiled rice, yeast, and coconut water. Grind until smooth and combine with the rice paste.

Grind the soaked raw rice with 1.5 cups of water into a smooth paste and transfer to a bowl.

Mix the batter thoroughly by hand for 5 minutes. Place it in a warm area (like inside a pot with warm water) and let it ferment for 8–9 hours until bubbles form.

After fermentation, add salt and sugar, mixing well to combine.

Heat an appam pan. Pour a ladle of batter, swirl to coat the edges, and cover. Cook for 2 minutes on low-medium heat until the edges are crispy and the center is cooked through.
