Raw rice (1 cup)
Jaggery (3/4 cup to 1 cup )
1 cup Water
1 large Banana
1 cup Coconut
2 pinch Salt
1 tsp Cardamom Powder
as needed Clarified Butter (Ghee)
as needed Oil

Thoroughly wash 1 cup of raw rice and soak it in water for at least 2 hours. After soaking, drain the water completely and let the rice dry slightly.

In a small pan, heat 1 tablespoon of ghee and 1 tablespoon of cooking oil. Add 1/2 cup of finely cut coconut pieces and fry until they turn golden brown. Remove from the pan and set aside.

Using the same pan, melt 3/4 cup to 1 cup of jaggery with 1/2 cup of water. Once fully melted, strain the liquid to remove any impurities and let it cool completely.

Grind the soaked rice into a fine powder without adding any water. Transfer this powder into a mixing bowl.

Add 2 pinches of salt and 1 teaspoon of cardamom powder to the rice powder and mix well.

Add 1 large ripe banana (or 3 small ones) to the bowl and mash it into the rice mixture.

Gradually pour the cooled jaggery syrup into the bowl while mixing to achieve a smooth batter consistency. Finally, stir in the fried coconut pieces.

Cover the bowl and let the batter rest for 6 to 8 hours to allow for proper fermentation and consistency.

Heat an appam pan and add a generous amount of oil (you may mix in a little ghee for extra flavor). When the oil is hot, pour the batter into each mold on medium heat.

Once the bottom side turns brown, flip the appams to cook the other side. When both sides are golden brown and cooked through, remove them from the pan and serve.
