Ingredients

1 cup Curd

1 tsp Turmeric Powder

2 tsp Red Chilli Powder

1 tsp Coriander Powder

1 tbsp Biryani Masala

1 tsp Salt

Ginger garlic paste : 1 tsp

2 medium Onion (thinly sliced)

1 piece Green Chilli (roughly chopped)

2 medium Tomato (roughly chopped)

1 large Carrot

A few Beans

1 large Potato (cubed)

1 cup Cauliflower Florets

1 cup Green Peas

Handful Fried Onions (Birista)

Handful Fresh Coriander

Handful Mint Leaves

1 tbsp Oil

2 tsp Clarified Butter (Ghee)

as needed Cooked Basmati Rice

as needed Water

Saffron : as needed

Instructions

In a bowl, combine curd, turmeric, chili powder, coriander powder, biryani masala, salt, and ginger-garlic paste. Mix well.

Add all the vegetables, fried onions, coriander, and mint to the marinade. Coat well and let it sit for 20 minutes.

Heat ghee and oil in a pot. Add the marinated vegetable mix and saute for 5 minutes

Cover and cook on medium flame for 15 minutes until vegetables are tender.

Remove half the vegetables. Create a layer of rice, add back the vegetables, then top with a final layer of rice.

Garnish with saffron water, fried onions, biryani masala, coriander, and mint. Cover and cook on low flame for 15 minutes.

Turn off the stove and let it rest for 10 minutes before serving.
