Ingredients

430 g Rice Flour

70 g All-Purpose Flour (Maida)

75 g Melted Butter

1 tbsp Sesame Seeds

1 tbsp Cumin Seeds

1 tsp Salt

1 tsp Red Chilli Powder

1 tsp Turmeric Powder

250 ml Lukewarm water

For deep frying Groundnut Oil

Add sesame and cumin seeds to a pestle and mortar. Grind them into a coarse powder to release their natural oils and flavor.

In a large bowl, mix the rice flour, plain flour, melted butter, ground seeds, salt, chilli powder, and turmeric. Rub with your hands until the mixture reaches a breadcrumb-like texture.

Gradually add lukewarm water, mixing until you form a soft, pliable dough.

Cover the dough and let it rest for 15 minutes.

Knead the dough slightly to soften. Fill a chakli maker (noodle press) with the star-shaped attachment. Press out spiral discs onto baking paper.

Heat oil in a large pan. Carefully slide the chaklis into the oil and fry for 2–3 minutes per side until golden brown and crispy.

Remove and place in a sieve or on paper towels to drain excess oil.
