Ingredients

1 cup Pearl Millet (Bajra Flour)

to taste Salt

1 tsp Clarified Butter (Ghee)

as needed Water

Sift the pearl millet flour. Add salt, a teaspoon of ghee, and enough water to form a soft, manageable dough. Knead the dough thoroughly using your palms and wrists until smooth.

Take a portion of the dough immediately. Sprinkle flour on a board and your palms. Gently pat the dough into a thick, flat circular shape, sealing any cracks at the edges.

Heat a nonstick or iron pan. Carefully place the rotla on the hot pan. Apply a little water to the surface to prevent dryness.

Flip to cook the other side evenly. Finally, cook the rotla directly over the flame until well-done on both sides. Apply a generous amount of ghee or white butter before serving warm with the prepared chutney.
