Ingredients

1 cup White Sesame Seeds

2 cups Rice

3 Green Chilli

1 piece Ginger

2 tbsp Clarified Butter (Ghee)

4 glass Water

1 tsp Fenugreek Seeds

1 pinch Asafoetida

2 Bay Leaf

handful Coriander Leaves (chopped)

7 cloves Garlic

2 piece Dry Red Chilli

Instructions

Wash and soak the rice in water. Set aside.

Dry roast the sesame seeds in a pan over medium heat until they turn pinkish, become plump, and release a nutty aroma. Let them cool.

Grind the roasted sesame seeds, garlic, ginger, and green chilies into a smooth, fine paste using a little water.

Bring 4 glasses of water to a boil in a large pot or pressure cooker. Add the soaked rice and the prepared sesame paste.

Stir well and cook on low-medium flame until the rice is fully soft and the mixture thickens into a porridge-like consistency.

For the tempering, heat ghee in a small pan. Add fenugreek seeds and let them turn golden brown.

Add asafoetida, dried red chilies, fresh green chilies, and bay leaves. Fry until fragrant.

Turn off the heat and stir in the fresh coriander leaves.

Pour this aromatic tempering over the cooked rice mixture and serve hot.
