Ingredients

2 cup All-Purpose Flour (Maida)

1 tsp Salt

as needed Water

1 pinch Turmeric Powder

3 tsp Oil

1 cup Bengal Gram (Chana Dal)

1 cup Jaggery (Powdered)

to taste Cardamom Powder

1 tbsp Clarified Butter (Ghee)

Instructions

Combine maida, salt, and turmeric in a bowl. Add water and 2 teaspoons of oil, kneading into a soft dough. Apply 1 teaspoon of oil over the surface and let it rest for 1 hour.

Pressure cook the soaked chana dal with water for 5-6 whistles. Drain, mash the dal thoroughly, and transfer to a pan.

Add jaggery to the mashed dal and cook on medium heat for 10-15 minutes until thick. Stir in cardamom powder and ghee, then remove from heat to cool completely.

Once cool, shape the puran mixture into small equal-sized balls.

Divide the rested dough into balls. Flatten a dough ball, place a puran ball in the center, and seal the edges tightly.

Place the stuffed ball between two greased butter paper sheets. Gently press and spread it into a flat disc using your palms.

Cook on a hot greased tawa, flipping every 10-15 seconds until both sides are golden and cooked evenly.
