Ingredients

3 large Potato

1 cup Peanuts

10 piece Cashew Nuts

10 piece Almonds

2 Green Chilli (chopped)

10 Curry Leaves

1 tsp Rock Salt

2 tsp Powdered Sugar

1 tsp Black Pepper Powder

For deep frying Vegetable Oil

Peel the potatoes and grate them into thick "lachha" (straws) using a wide-holed grater directly into a bowl of cold water.

Rinse the grated potatoes 3–4 times in fresh water until the water runs clear. This removes the starch and ensures crispiness.

Drain the potatoes completely and spread them on a clean kitchen towel. Pat them dry to remove all surface moisture before frying.

Heat oil in a kadai on medium-high. Fry the potato straws in small batches until they turn golden and crispy. Drain on absorbent paper.

In the same oil, deep-fry the peanuts, cashews, and almonds until golden. Quickly fry the green chillies and curry leaves until crisp.

While the fried ingredients are still slightly warm, transfer everything to a large bowl. Sprinkle Sendha namak, powdered sugar, and black pepper.

Toss gently to coat evenly. Let it cool completely before storing in an airtight container.
