Ingredients

2 cup Gram Flour (besan)

1 tsp Salt

1 tsp Pepper (crushed)

1 tsp Coriander Seeds

1 tsp Semolina(Rava)

1 tsp Sugar

1 tsp Carom Seeds (Ajwain)

pinch Asafoetida

as needed Fenugreek Leaves (Methi)

1 bowl Coriander Leaves (chopped)

2 Green Chilli

pinch Baking Soda

to taste Lemon Juice

as needed Water

as needed Oil

Instructions

1

In a large mixing bowl, combine the besan, salt, crushed pepper, crushed coriander seeds, sooji, sugar, ajwain, and hing. Mix well.

2

Add the chopped fresh methi leaves, coriander leaves, and green chilies to the dry mixture. Stir to combine thoroughly.

3

Gradually pour in water while mixing to achieve a smooth, dropping consistency. Ensure the batter is not too runny.

4

Add a pinch of cooking soda and a few drops of lemon juice to the batter, then mix well.

5

Heat oil in a deep kadai or pan over medium-high flame.

6

Once the oil is hot, carefully drop small portions of the batter into the oil.

7

Fry in batches, tossing the fritters occasionally to ensure they cook evenly and achieve a uniform golden-brown color.

8

Remove the bondas from the oil once they are crispy and golden. Serve hot with mint-coriander chutney.
