Ingredients

3 medium Onion (sliced)

2 Green Chilli (chopped)

1 piece Ginger (chopped)

handful Coriander Leaves (chopped)

handful Curry Leaves (chopped)

to taste Salt

1 tsp Turmeric Powder

1 tsp Red Chilli Powder

1 tsp Asafoetida

3 tbsp Gram Flour (besan)

2 tbsp All-Purpose Flour (Maida)

2 tbsp Rice Flour

as needed Oil

Instructions

Combine the thinly sliced onions, green chillies, ginger, coriander leaves, and curry leaves in a large mixing bowl.

Add the salt, turmeric powder, chili powder, and asafoetida powder. Mix well, ensuring the onions are coated and begin to release moisture

Add the gram flour, all-purpose flour, and rice flour. Mix until the onions are well coated in the flour mixture. Do not add water.

Let the mixture rest for 10 minutes.

Heat enough oil for deep frying in a kadai over medium-low heat

Take a small portion of the onion mixture, gently pat it on your palm to form a rough vada shape, and carefully drop it into the hot oil.

Deep fry until the vadas turn a lovely golden brown and are cooked through.
