Ingredients

2 cups Yellow Lentils

4 inch Ginger

7 Green Chilli

2 tsp Cumin Seeds

2 tsp Coriander Seeds

2 tsp Peppercorns

2 tsp Red Chilli Powder

2 tsp Dry Mango Powder

8 tbsp Coriander Leaves (chopped)

2 tbsp Mint Leaves

1 tsp Salt

1 tsp Sugar

1 tbsp Lemon Juice

For deep frying Oil

2 Ice cubes

Drain the soaked yellow lentils and transfer them to a grinder along with 2 inches of ginger and 4 green chilies. Grind into a thick, coarse mixture.

Transfer the mixture to a bowl and whisk vigorously for 3 to 4 minutes. This process aerates the batter, creating light and fluffy fritters.

Add cumin seeds, crushed coriander seeds, crushed peppercorns, red chili powder, dry mango powder, chopped green chilies, chopped coriander leaves, and salt to the batter. Mix well.

Heat oil in a deep pan. Carefully drop small spoonfuls of the batter into the hot oil.

Fry on medium heat until the fritters turn golden brown and crispy, turning them occasionally to ensure even cooking.

Remove the fritters from the oil and set aside.

To make the chutney, combine coriander leaves, mint leaves, remaining ginger, green chilies, salt, sugar, lemon juice, and ice cubes in a grinder. Blend until smooth.
