Ingredients

500 g Gram Flour (besan)

1 tbsp Black Pepper (roughly crushed)

2 tsp Carom Seeds (Ajwain)

1 cup Water

1 cup Oil

For frying Oil

1 tsp Asafoetida Powder (Hing)

to taste Salt

1 tsp Papad Khar

Combine the besan, crushed black pepper, and carom seeds in a large mixing bowl.

In a separate bowl, whisk together the water, oil, papad khar, salt, and asafoetida until the mixture becomes pale, thick, and fluffy.

Gradually add this liquid mixture to the flour while kneading to form a smooth, soft dough.

Grease your hands with oil and knead the dough until it is consistent and smooth.

Grease a sev-making machine and a coarse-holed plate with oil.

Fill the machine with the dough and seal it.

Heat oil in a deep pan. Test the heat by dropping a tiny bit of dough; it should rise immediately.

Press the machine to release the dough directly into the hot oil in circular motions.

Fry over low-to-medium heat, turning occasionally, until the gathiya turn crisp and light golden yellow. Do not over-brown.
