Ingredients

1 kg Flattened rice (Poha)

5 tbsp Oil

1 cup Peanuts

4 tbsp Bengal Gram (Chana Dal)

8 piece Cashew Nuts

8 piece Almonds

Dry coconut : chopped

1 tsp Cumin Seeds

Fannel Seed 1 tsp

15 piece Curry Leaves

6 piece Green Chilli (chopped)

1 tsp Salt

1 tsp Turmeric Powder

few Dry Red Chilli

3 tsp Powdered Sugar

1 tsp Asafoetida Powder (Hing)

Instructions

Prepare the seasoning by mixing turmeric, salt, sugar, and heeng in a small bowl. Set aside.

In a heavy-bottomed pan, dry roast the poha on medium heat for 6-8 minutes until crisp. Set aside.

Sieve the thin poha to remove any dust or broken particles.

Heat oil in a pan. Fry peanuts, chana dal, dry fruits, and coconut pieces separately until golden brown. Remove and drain.

In the same pan, add jeera and saunf. Once they crackle, add curry leaves, green chillies, and dried red chillies.

Lower the flame and add the prepared spice mixture, sautéing for 30 seconds.

Add the roasted poha and fried ingredients to the pan. Toss well on low heat for 4-5 minutes until evenly coated and crunchy.

Let it cool completely before storing in an airtight container.
