Ingredients

1 cup Sago pearls (Sabudana)

4 small Potato (boiled & mashed)

3/4 cup Peanuts (coarsely ground)

1 tsp Green chilli paste

1 tsp Cumin Seeds

5 piece Curry Leaves

2 tbsp Coriander Leaves (chopped)

1 piece Lemon

2 tsp Sugar

to taste Salt

For deep frying Oil

Wash 1 cup of sabudana (sago) thoroughly.

Soak it in 1 1/2 cups of water for 3 hours until it fluffs up. (If you are in a hurry, use lukewarm water and soak for 30 minutes).

In a bowl with the soaked sabudana, add 1 1/2 tsp green chili paste, a few torn curry leaves, 2 tbsp chopped coriander, juice of 1/2 lemon, 2 tsp sugar, and salt to taste.

Mix and lightly mash the sabudana.

Add 1 tsp jeera (cumin seeds), 3/4 cup coarsely ground peanuts, and 4 small boiled and mashed potatoes. Mix everything together thoroughly.

Apply a little oil to your palms (the mixture is sticky).

Take a small portion of the mixture and shape them into flat rounds.

Heat oil in a pan. Ensure the oil is nice and hot.

Gently add the vadas to the hot oil.

Fry on a high flame, flipping them once, until they turn a beautiful golden brown.

Serve fresh with green chutney, coconut chutney, or sweet curd.
