Ingredients

1 cup Amaranth Flour (Rajgira)

3 medium Potato (boiled, and peeled)

3 tsp Ginger-Green Chilli Paste

1 tbsp Coriander Leaves (chopped)

to taste Rock Salt

2 tbsp Clarified Butter (Ghee)

Instructions

Grate the boiled and peeled potatoes into a mixing bowl.

Add the ginger-green chilli paste, chopped fresh coriander, and rock salt to the grated potatoes. Mix everything well.

Gradually add the rajgira (amaranth) flour to the potato mixture. Knead it into a stiff dough. Once combined, add a couple of spoons of ghee and knead again until smooth.

Allow the dough to rest for 10 to 15 minutes.

Grease a plastic sheet with a little ghee. Divide the dough into equal-sized balls. Place a ball on the greased sheet, dip your fingers in ghee, and gently press or spread the ball into a flat, circular disc.

Heat sufficient ghee in a kadai (deep pan). Carefully slide the prepared disc into the hot ghee.

Deep-fry the puri until it is golden brown and puffed up.

Remove the puri and drain it on absorbent paper. Repeat the process for the remaining dough and serve hot.
