Ingredients

1 cup Sugar

1 tbsp Fennel Seeds

8 piece Peppercorns

1 tbsp Poppy Seeds

A pinch Saffron Strands

6 piece Green Cardamoms

3 tbsp Dried Rose Petals

6 piece Almonds

1 l Cold Milk

A few Ice cubes

For garnishing Almond Flakes

For garnishing Pistachio Flakes

Instructions

Step 1Prepare the Thandai Masala

In a grinder, add the peppercorns, almonds, saffron, poppy seeds, fennel seeds, and peeled green cardamoms.

Grind these ingredients into a fine powder.

Add the dried rose petals and sugar to the mixture.

Continue grinding until you achieve a nice, fine powder. You can store this masala in an airtight container in the refrigerator for up to 3 to 4 months.

Step 2Prepare the Drink

In a blender, combine 1/2 litre of chilled milk with 7 to 8 tablespoons of your prepared Thandai masala.

Add a few ice cubes.

Blend well until the ingredients are thoroughly mixed.

Step 3Intensify Flavors and Serve

For the best results, let the drink sit in the refrigerator for at least 2 hours (or overnight) to allow the flavors to intensify.

Once chilled, pass the Thandai through a fine strainer into serving glasses.

Garnish with almond flakes, pistachio flakes, and a few dried rose petals.
