1 cup Oil

1 cup Water

1 tsp Baking Soda

1 tsp Asafoetida Powder (Hing)

to taste Salt

2 cups Gram Flour (besan)

1 tsp Black Pepper Powder

1 tsp Coriander Cumin Powder

In a bowl, combine 1 cup oil, 1/2 cup water, and baking soda. Whisk vigorously until the mixture turns white and frothy.

Add hing and salt, then gradually fold in the sifted besan, whisking continuously to keep the texture light.

The batter should be smooth and soft. If using a specific papadi press (jara), ensure the consistency is slightly thin; if using a sev maker, the batter can be slightly thicker.

Heat oil in a deep pan on medium-low flame.

Place the batter on the jara and press with your palm to drop the dough strips directly into the oil.
