Ingredients

Main Ingredients:

1 cup Barnyard Millet

1 cup Sago pearls (Sabudana)

1 tsp Rock Salt

1 tsp Sugar

2 tsp Oil

1 tsp Ginger-Green Chilli Paste

1 tsp Eno fruit salt

For Garnishing/Seasoning:

A pinch Red Chilli Powder

crushed pinch Pepper

Tempering:

1 tbsp Oil

1 tsp Cumin Seeds

2 tsp Sesame Seeds

3 piece Green Chilli (slit)

A few Curry Leaves

For garnishing Fresh Coriander

Instructions

Lightly roast barnyard millet (Sama rice) for about 2 minutes. Let it cool completely, then grind it into a fine powder.

Separately grind sabudana (sago) into a fine powder and keep it aside.

In a large bowl, mix the millet powder, sago powder, rock salt, sugar, oil, and ginger-green chili paste.

Add sour curd. Gradually add water, mixing well until you reach a dropping consistency.

Cover and let the batter rest.

After resting, add Eno fruit salt (or baking soda) to the batter and mix well to make it fluffy.

Pour the batter into a greased steamer tray lined with a banana leaf or butter paper.

Garnish with a pinch of chili powder and crushed pepper.

Steam the batter.

Heat oil in a small pan. Add cumin seeds, sesame seeds, slit green chilies, and curry leaves.

Once the dhokla is cooled slightly, release it from the tray and cut it into your desired shapes.

Pour the prepared tempering over the dhokla pieces and garnish with fresh coriander leaves.

Serve hot with spicy mint chutney.
