Ingredients

1 cup Sago pearls (Sabudana)

1 cup Roasted Peanuts

3 cup Potato (boiled)

2 Green Chilli (chopped)

1 tsp Ginger (grated)

1 tsp Cumin Seeds

few Curry Leaves

1 tbsp Lemon Juice

For garnishing Fresh Coriander

6 tsp Groundnut Oil

to taste Salt

1 tsp Sugar

Wash the sabudana thoroughly and soak it in just enough water to cover it for 4–6 hours or overnight. Drain any excess water before cooking.

Roast the peanuts until crunchy, remove the skin, and coarsely grind/crush them. Mix half of these crushed peanuts directly into the soaked sabudana.

Heat ghee or oil in a pan. Add cumin seeds and let them splutter. Add curry leaves, green chilies, and grated ginger.

Add the boiled, cubed potatoes to the pan and sauté for a couple of minutes until they get a slight golden crust.

Add the soaked sabudana-peanut mixture to the pan. Add salt and sugar. Mix well on low-medium heat.

Cover the pan with a lid and cook for 2–3 minutes until the sabudana pearls turn translucent.

Turn off the heat. Add the remaining crushed peanuts, lemon juice, and fresh coriander. Toss gently and serve hot.
