Ingredients

2 bowl Gram Flour (besan)

1 tsp Black Pepper (roughly crushed)

1 pinch Carom Seeds (Ajwain)

1 bowl Oil

to taste Salt

1 pinch Baking Soda

For frying Oil

1 bowl Water

1 glass Water

In a large bowl, combine gram flour, crushed black pepper, and crushed carom seeds. Mix well.

In a separate bowl, whisk together the 1/2 bowl of oil, 1/2 bowl of water, baking soda, and salt. Whisk vigorously for 2-3 minutes until the mixture turns thick, pale, and creamy like ghee.

Gradually add this prepared creamy mixture to the gram flour. Mix gently without adding extra water initially to ensure a stiff texture.

Once combined, knead the dough. Gradually add small amounts of water, kneading and pressing the dough until it becomes soft and pliable. This step is crucial for the final texture.

Whisk the dough with a spoon for another 2-3 minutes to make it airy and light in color.

Grease a Gathiya press (or sieve) and your hands thoroughly with oil.

Place the dough into the press and squeeze directly into the hot oil. Avoid overcrowding.

Heat oil in a deep pan over medium flame.

Fry until the bubbles subside and the Gathiya turn a light golden color. Remove and drain on paper towels.
