Ingredients

1 cups Amaranth Flour (Rajgira)

1 piece Potato (boiled & grated)

1 tsp Roasted Cumin Powder

2 pinch Black Pepper Powder

1 tbsp Sesame Seeds

1 tsp Green chilli paste

1 cup Coriander Leaves (chopped)

1 tbsp Oil

to taste Rock Salt

as needed Water

In a mixing bowl, combine one boiled and grated potato with seasoning ingredients including roasted cumin seed powder, black pepper powder, sesame seeds, green chili paste, chopped coriander leaves, rock salt, and one tablespoon of oil.

Add 1 1/2 cups of amaranth (Rajgira) flour to the mixture. Gradually add water as needed to knead everything into a smooth dough.

Apply a little bit of oil over the dough and let it rest for 5 minutes.

Divide the dough into small portions and shape them into round balls. Dust a rolling board with some amaranth flour and roll each ball into a thin, round thepla. If the edges are uneven, you can use a sharp lid to trim them.

Heat a pan and roast the thepla on both sides. Flip and drizzle with a little oil or ghee. Cook until golden and done.
