Ingredients

2 cups Amaranth Flour (Rajgira)

2 medium Potato (boiled & mashed)

2 Green Chilli (chopped)

1 tsp Ginger (crushed)

1 tsp Cumin Seeds

Fresh Coriander

Rock Salt

Groundnut Oil

as needed Water

Instructions

1

In a large mixing bowl, combine the rajgira flour, mashed potatoes, chopped green chilies, ginger paste, cumin seeds, coriander, and rock salt.

2

Mix well so the moisture from the potatoes binds with the flour. Add a teaspoon of ghee and very little water only if necessary to form a smooth, firm dough. Let it rest for 5 minutes.

3

Divide the dough into equal-sized small balls.

4

Dust a rolling board with a little dry rajgira flour. Gently roll out each ball into a medium-sized circle.

5

Since Rajgira is gluten-free, you can also press the dough between two sheets of parchment paper or plastic to prevent breaking.

6

Heat a tawa (griddle) on medium heat. Place the thepla on it and cook until small bubbles appear.

7

Flip it over, apply a little ghee or oil on both sides, and press gently with a spatula.

8

Cook until golden brown spots appear on both sides. Serve hot with curd or vrat-style potato curry.
